Developed in close collaboration with Major Food Group, Carbone is an intimate portrait of the New York City institution. Through never-before-published recipes, behind-the-scenes anecdotes, and the voices of its founders, Mario Carbone, Jeff Zalaznick, and Rich Torrisi, the book captures the spirit and energy of the restaurant.
Propelled by an extended conversation with writer Gabe Ulla and exclusive photography by Oliver Pilcher, the book documents a single night inside the restaurant, where the hum of the room, the glow of the red neon sign, and the choreography of service.
